Nonstick food release. Nonstick food release score reflects the nonstick qualities of a pan's interior by cooking four eggs consecutively. The pan is initially seasoned with vegetable oil prior to cooking the first egg. An Excellent score indicates that all four eggs slid off the pan without assistance; A Poor score indicates that scraping was needed to release any egg from the pan and some egg residue was left on the pan.
Nonstick durability. To assess nonstick durability, we intentionally abraded frying-pan surfaces with steel wool until the coating was worn through or up to 2, strokes. Scoring reflects the durability of the frying-pan's coating and it's nonstick quality after being abraded. Handle temperature. Handle temperature relates to the temperature during heating.
Handle sturdiness. Handle sturdiness indicates how well the handle withstands a test designed to stress it and its attachments. Unlock for unbiased ratings and reviews for products and services you use everyday.
If you try and get any information on these products, you discover that they have bombed the web with fake or almost fake review sites, all of which have very positive things to say about their cookware. There are some critical comments at Complaintsboard and at Chowhound. These products are made to be non-stick without a Teflon coating, which many people prefer to steer away from. Based on the negative comments on the latter two web sites, we decided not to order directly from the company Ozeri.
Too many people had trouble with credit card overcharges, and having an entire set shipped to them instead of the single trial pan. If you go to their web site, you will find that they want your credit card number before they tell you what they are charging you for: never a good sign.
Instead, we opted to order the pan from Amazon. The pan arrived in two days. Despite the picture on the Amazon web site, the pan came without any box or recipes, wrapped in bubble wrap and stuffed into a Tyvek Priority Mail envelope. Despite the indestructibility claims of the infomercial, there was a small dent and chip in the pan when it arrived. Why should we pay for their mistake? A small circular insert paper in the pan said that the pan should be seasoned before use.
You are to pour a film of oil in the bottom of the pan, coat the sides and heat the oil until it begins to smoke. Then pour it out and let the pan cool. Wipe out the excess oil. You are supposed to repeat this twice yearly. Pouring a film of oil into this pan is actually quite difficult, because the ceramic surface is non-porous, and the oil tends to bead up instead of covering the pan smoothly. To make sure, we washed the pan with soap and water before trying again.
We then poured in enough oil to cover the bottom and heated it until it began to smoke. This can make quite a smell in the house, and you should open the windows or make sure your exhaust fan is running.
Now, when you season a cast-iron pan, you are really making a thin polymeric layer on top of the porous iron. In the case of these ceramic-coated pans it is not clear why we are doing this. Further, you are supposed to hand wash the pan rather than put it in the dishwasher, which might spoil the seasoning. This was an annoying discovery, to say the least and certainly would keep us from buying more of them. Well most of my non-stick pans do, so I thought it was a pretty good question for the guy to ask.
This supposed super pan is called Orgreenic, and the company says its surface is made up of part ceramic and some sort of scientifically created mixture the company came up with. The combination of the two materials is supposed to make foods slide off the pan without it sticking even a little bit, and it should perform that way up to degrees. The pan is also supposed to be easy to clean because even burned foods slide off very easily, the company says. The commercial also shows a person cooking an egg sunny side up in the green frying pan, and sliding the egg back and forth, which never happens in the non-sticks that I own.
It leads me to ask why many non-sticks are made so poorly? I mean, having foods not stick is the only purpose of the pan, so you would think its makers would at least get that one function right. Or when a dishwasher performs poorly and only washes some of the dishes.
So for our next installment of Does it Really Do That, we put the Orgreenic pan to the test to see if its surface is as slick and high quality as the company says. Once I got the Orgreenic in my kitchen, I was eager to cook those foods that tend to stick to my own pans, which also happen to be some of the items that were cooked in the TV commercial. Yes, you can fry foods in it too.
The Orgreenic is made of all-natural ceramic which is just fired clay, part of the earth and covered by a lifetime warranty. If it ever chips or develops other issues, simply return it with postage and they will ship you a new one completely free, or they'll repair small issues and return your pan.
Either way, you are covered for a lifetime of cooking. You have to season your pan when you first get it. The label recommends spraying the pan with cooking oil, heating it to medium heat, and watching until the oil starts to smoke.
Your pan is then seasoned, but you need to let it cool and then wipe clean prior to your first use. Why bother with seasoning? Like a cast iron pan, your Orgreenic or any other ceramic pan will need the protective coating this gives. But unlike a cast-iron pan, you can use warm soapy water or a gentle scrub pad to wash your Orgreenic pan as usual.
I put my pan on medium heat, and when it didn't start to smoke within fifteen minutes, I nudged the temp up and it started smoking. With the green pan, you'll notice your cooking oil goes from golden to deep brown in color. That's normal. Please keep in mind that this is not a one-time thing. Follow the instructions on your pan or re-season as needed.
You may find this also forms a protective coating that helps your pan perform better and adds to the non-stick qualities. I got my decades-old frypan out, the one coated with Teflon. I've noticed it seems to be wearing to a disturbing brown color in one spot, and the food no longer comes off easily, no matter what I do. Considering health issues do run in my family, and you are supposed to dump Teflon pans when scratches penetrate the surface this badly, it might be her final bow.
I made sure I just used a light cooking spray, about half what I normally use. I then broke the yolk of an egg and had a fine mess to clean up. The food did mostly come out OK, but the eggs stuck in some areas. After the debacle with the old frypan, I got my new Orgreenic pan out and decided to put the label to the test. Could I cook with no spray or butter at all? Yes, I could!
Now, I didn't try to glide the egg around the pan exactly like the ad, but try cooking with no spray in a non-stick pan. I also broke an egg on this pan, making sure to make a good mess. Keep in mind, I had no cooking spray on the pan.
It easily, and I mean easily , came off with mild soapy water. No more soaking a pan for hours, yay! I would say a tiny bit of spray, butter, or oil would certainly help things out, but I mean tiny. Or you could try water, as some vegans do when cooking. Yes, you might miss the taste of eggs that had to float in butter, but that brings up the next point. If you went to the Paula Deen school of cooking as I did, you tend to find joy in butter, oil, and cooking spray.
If you use enough of this to float the eggs in, the type of pan won't really matter. But if you are cutting back to be healthier, the Orgreenic pan will shine. Even when I used no cooking spray at all, my new pan still released the food with minimum fuss.
